Strawberry Cheesecake and Fudge


Strawberry Cheesecake

I keep saying it's as good as it looks, so here is the recipe. This is a rich, heavy dessert. It's not something you eat everyday. But if you want to impress yourself or your friends with your raw food skills, here the recipe for you!

Strawberry Cheesecake
Crust
2 cups almonds
1 cup raisins

Blend in food processor using “S” blade until fine and sticking together.

Filling
4 cups of cashews soaked for 1-3 hours if not using a Vitamix or Blen-tec blender
1 large lemon juiced
8 tablespoons honey
2 teaspoons vanilla
½ cup water

Blend together in food processor using “S” blade. Add the water slowly. Add more if needed, but you want a thick filling that will hold when you cut it. Pour into pie plate. Chill for 3-5 hours.

Strawberry Sauce
2 cups strawberries
2 tablespoons raw honey or agave nectar
Blend together in food processor using “S” blade.
